Growing up in Ottawa and embarking on his culinary career in a restaurant in Ottawa’s famous Byward Market, Chef Stuart learned about varying cuisines at a young age and discovered his passion for fusing the cuisines of different cultures. Upon moving to Calgary, he joined the team at Alloy for several years and is well versed with creating pairings for wine and champagne dinners. Previously while at Alloy, he was part of the culinary team to create an extremely well-received Veuve Clicquot pairing dinner for Dominique DeMarville, Veuve Clicquot’s Chef de Cave. Now, he is yet again displaying his passion for creation at 80th and Ivy. His motto when creating new dishes and menus for his guests is: “don’t limit yourself” and it is his strong belief in both experimentation and the blending of cuisines that enables him to ignore conventions and create his unique and inspiring signature dishes.
